Okay, so lets get started. You install the new joomla site, upload the content and start to build, but you don't want the customer to see you in progress, so you place the site down for maintenance.
When you do this, you realize that there is this big joomla logo and login box that just doesn't work well with your style of business. Not only that, but it isn't promoting your company.

Reasoning? It is because Joomla currently has almost 7,000 extensions in its directory. Of those almost 7,000 only less than 150 of them are 1.6 ready. The chances are that you and your site will have one of those other 6,500 extensions installed. This means that if you upgrade, you will have outdated extensions that wont work.
In addition, most of your extensions possibly no longer have an active developer. This means that you will never be ready to upgrade to 1.6.
If you really want to upgrade to 1.6, my suggestion is to duplicate your site and test it at the duplicated location to be sure that everything still works.
